Friends, thank you for all your encouraging words on my Hello 2018 post. Excited to say, I’m slowly ticking goals off my list and already seeing small improvements in my health. Plus, feels so great to be back to blogging “officially” and rolling out new content. This year, I’m definitely looking to spread my blogging wings and create more variety in what I post. Things like… recipes, wine pairings, wellness, more home updates and document our trips. And speaking of variety? Welcome to my kitchen / my first recipe post! One of my favourite ways to decompress after a long day, is to tuck into my kitchen, open a bottle of wine and cook a meal for my love, or a few friends. Sooo lovely!
1 package of gnocchi
1/2 jar tomato pasta sauce
1/4 cup whipping cream
1 can of wild salmon (my fave)
1 tbsp butter
2 cloves garlic
salt to taste
Melt 1 tbsp of butter in pot or sauce pan. Stir in 1/4 cup whipping cream, 1/2 jar of tomato sauce, add 2 cloves of minced (or pressed garlic) and 1 can of wild salmon (make sure to pour out any excess water and oil). Then bring your sauce to a simmer, stir occasionally to avoid burning.
While your sauce is simmering (and you’re sipping your favourite wine 😉 ) add your gnocchi to boiling water, and follow directions on package. When finished use a pasta strainer, rinse with warm water and add olive oil. Then serve gnocchi, add sauce, garnish with fresh basil (I also love using fresh parm, but I ran out) and salt to taste. This one from William Sonoma is my absolute favourite!
PS – For my fellow vegetarians?! I poured my sauce off to the side and then added salmon for Martin’s dish. On that note, hope you enjoyed seeing something a little different on G&C today. And if you try this super easy recipe?! Let me know what you think! xo
